  • 1 kg watermelon
    (prepared weight), cut into cubes
  • ice
  • 90ml fresh lime juice
    plus lime slices to serve
  • 120ml lychee syrup
  • non-alcoholic sparkling wine
    for topping up

Method

  • step 1

    Blitz the prepared watermelon in a blender until smooth.

  • step 2

    Tip some ice, the lime juice, lime slices, lychee syrup and puréed watermelon into a large pitcher, and stir well. Top up with non-alcoholic sparkling wine and stir.
