  • 50ml blackberry gin
    (see tip, below)
  • 25ml lemon juice
    plus lemon slices to serve
  • 2 tsp sugar syrup
  • 1 small egg white
  • ice
  • sparkling water
  • 1 blackberry or thyme sprig
    to garnish

Method

  • step 1

    Tip the gin, lemon juice, sugar syrup and egg white into a cocktail shaker. Shake well until frothy, then add a large handful of ice and shake again until the outside of the shaker feels cold.

  • step 2

    Double-strain into a tall glass filled with some more ice, then top up with the sparkling water. Thread a blackberry onto a cocktail stick to use as a garnish, or top with a thyme sprig.

BLACKBERRY GIN

Use shop-bought blackberry gin or homemade. It’s made by steeping berries and sugar in gin, and will make a liqueur in a few weeks, but will improve with age. John Wright advises that if you do make your own, patience is key: ‘Blackberries and gin both have distinct flavours, so it does take time for them to settle together.’
