Bitter grapefruit G&T
Shake up a classic cocktail with a simple twist. Perfect before or after a meal, serve this gin & tonic with a wedge of grapefruit and plenty of ice
Finely grate 2cm ginger into a cocktail shaker, add 7-8 ripe cherry tomatoes and crush well with a muddler. Fill up with ice and 100ml Mediterranean gin. Shake well, then double strain into two glasses. Top with more ice and 200ml Mediterranean tonic. Garnish each glass with a halved cherry tomato on a cocktail stick. Add a few drops of arbequina or another good quality extra virgin olive oil just before serving.
