Potato fritters
Similar to potato rösti and hash browns, these fritters make an excellent base for your favourite toppings at brunch or breakfast. We've opted for fried eggs and avocado
Cook the peas in a pan of boiling water according to pack instructions. Drain well, then use a fork to roughly mash some of the peas. Keep most of them whole.
Return to the pan and add the butter, olive oil, herbs and chilli flakes, if using. Stir well to combine with a big pinch each of salt and pepper. Transfer to a serving bowl with the lemon wedges on the side for squeezing over.
