BBQ pulled pork sandwich
Slow cook pork shoulder for four hours in the oven to tenderise then finish on a BBQ. Serve with a thick, tangy sauce
Lay the slices of streaky bacon across the bottom of a small frying pan, then turn the heat up to low. Cook slowly until very crisp, and all the fat has collected at the bottom of the pan. Remove from the pan and set aside.
Meanwhile, spread the outside of the bread with the butter, then spread the peanut butter on the inside of both slices. Lay one slice of the buttered bread in the pan so the butter is touching the bacon fat, adding a small piece of butter to the pan if the bacon wasn’t very fatty. Lay the banana on top and the bacon on top of that. Sandwich the remaining piece of bread on top.
Cook on medium heat for 2-3 mins on each side until golden. Lift out and drain on kitchen paper, then slice in half and enjoy.
