Method

    Whip the cream, sugar and vanilla together in a bowl using a hand blender or electric whisk until the mixture forms soft peaks. Will keep chilled for a few hours. Serve spooned or piped alongside desserts or as a filling for cakes or buns. It's also delicious served with soft summer fruits and berries.

Any sugar

We’ve chosen to use golden caster sugar as it has a mild toffee flavour but the same amount of white caster or sifted icing sugar would work just as well.

The right cream

For cream to set it needs to be high in fat so don’t try and make this with single cream or low fat crème fraiche but full fat crème fraiche would work as would whipping cream.

Other flavours

A classic Chantilly is simply sweetened and flavoured with vanilla but there are lots of other flavoured creams you can make in the same way.

Coffee cream: As well as the vanilla whisk the cream with 1 tsp of coffee essence or 3 tbsp of chilled strong coffee.

Citrus cream: Omit the vanilla and flavour the cream with the finely grated zest and a squeeze of juice from an orange, lemon, or lime.

Boozy cream: Give the cream a more grown-up twist with a splash of whisky, rum or brandy.

Rose cream: Add a sweet floral note to the cream with a few drops of rose water.
