Watermelon punch

- 1 watermelonweighing roughly 2.5kg
- 300ml vodka
- 250ml lemonade
- 2-4 limesjuiced

Method
step 1
Chop the top off the watermelon, about 3 inches down, so you have a wide circle on the top. Set the lid aside, then scoop out the flesh of the watermelon and put in a food processor. Blitz until smooth then sieve back into the shell, or a jug. Discard the pulp and pips. If you don’t have a food processor you can put the watermelon flesh in a bowl and blitz using a hand blender, then strain into the shell or a jug.

Stir the vodka and lemonade into the watermelon juice, then add the juice of 2 limes and taste. If it needs more sourness to balance the sweetness, add more lime juice and stir well.

Chop the lid of the watermelon in half along the length, then slice each half into triangles. Make a cut in the flesh side of each triangle and use to decorate the rims of glasses for the punch to be ladled into. Serve over ice.
