How to freeze strawberries

Freezing strawberries is a great way to avoid waste if you have a glut, and it's a sustainable way to enjoy them past the season.

Like most fruit that has been frozen, strawberries tend to turn quite mushy once defrosted, so they aren’t ideal to eat as fresh, however they work wonderfully in smoothies, compotes and jams and desserts. Alternatively, they'll work well in their frozen state. Always freeze strawberries that are at the peak of their freshness.

Basic method for freezing strawberries

  1. Prep the strawberries by washing them in cold water and patting dry with kitchen paper.
  2. Cut and discard the stems, then freeze whole or cut to desired size.
  3. Lay the prepared strawberries on a tray and put in the freezer and until solid. Once frozen, transfer to labelled resealable freezer bag, ensuring you remove any excess air before sealing. Frozen strawberries are best used within six months.

Using/cooking strawberries from frozen

There is no need to defrost frozen strawberries before using or cooking. Blitz them in a strawberry smoothie, cook in a pan with sugar to make compotes and strawberry jam, or bake in desserts like our strawberry & almond cheesecake sponge. If baking, you may need extra time, or defrost for a few minutes to thaw before using in a recipe.
