A black substance that comes from the ink sack of squid, also known as calamari. The squid releases the ink to frighten off predators, but it is also a prized cooking ingredient, adding a striking black colour and a mild salty flavour to risotto, pasta and even bread.
Availability
Buy it already extracted from the squid and pre-packaged from Italian food stores.
Cook it
Add the ink to the water as pasta and risotto cooks.
